"Some times when I cook, I seek to nourish the soul that
transcends the body I am feeding"
J. Saucier
Each time he prepares a batch of Gumbo or Étouffee, Saucier
recalls his youth in Orleans and St. Tammany Parishes. The smells
and flavor of Creole and Cajun cooking carry him there from
the restaurants along Mississippi River at Decatur street, to
grandmas apartment blocks away, to the Creole shack he called
home on the North Shore of the Pontchartrain.
